Ok, so the bars are closed here in Ireland on Good Friday, so.....what to do??????

Here is a couple of recipes for you to try:-

AFRICAN ALEXANDER
25mls Hennessy VS
25mls Amarula Cream Liqueur
25mls Creme de Cacao Dark
25mls fresh cream

Method:- Pour all the ingredients into a cocktail shaker. Add ice. Shake well and double strain into a chilled martini glass/coupette. Dust with grated nutmeg..

Deliciously rich,creamy and chocolatey it is the perfect cocktail for chocolate lovers. A fruity twist on the classic cocktail Brandy Alexander.

And for you none cream lovers..........

CHERRY MANHATTAN
60mls Woodford Reserve Bourbon
20mls Martini Rosso
5mls Cherry syrup
1 drop angostura bitters

Method:- Pour the bourbon, Martini Rosso and syrup to a mixing glass with ice. Add a dash of bitters and stir. Strain into a chilled cocktail glass. Garnish with a Maraschino infused cherry.

BOLS FOAMS NOW IN IRELAND

During a training sesison in Dundalk last week I spotted what I thought were quite dinky minitaure bottles of Bols liqueurs only to discover that they were actually Bols Foams.

Available in the following flavours:-

BLUE CURACAO
BANANA
CREME DE CASSIS
AMARETTO
CREME DE MENTHE GREEN
CREME DE CACAO WHITE

You can get them from Barry and Fitzwilliam 021-4320900 or 01-6671755

I used a couple of them and found them easy to use, the foam lasted ages and tasted great. My only drawback would be the selection of flavours avilable. But if they take off, I am sure they will work on other flavours.

Oh and because of the small amount that comes out with each pump, covering the top of a martini cocktail takes a little time.

Keep your drinks in champagne flutes and highballs for now :-) but definitely worth a trial!!!!!!

Hosting a little dinner at home tomorrow night??

Here is a couple of suggestions for you to make tomorrow night for your loved one................

FOR HER

That's Amore

35mls Vodka
17.5mls Strawberry liqueur
35mls Strawberry puree
Champagne to top up
Martini glass
Cracked black pepper

Method:- Add the vodka, liqueur and puree to a cocktail shaker. Add ice and shake well. Take a whole strawberry and wipe the rim of a martini glass with it. Then dip the martini glass in the cracked black pepper.
Strain the mixture into the martini glass, it should come to just above halfway. Then top with Champagne. garnish with the strawberry you used earlier!!!!

FOR HIM

Apricot and Nutmeg Sour

50mls Bourbon
17.5mls fresh lemon juice
10mls Sugar syrup
1.5 tsp apricot conserve
10mls egg white(optional)

Method:- Add the bourbon,lemon and sugar into a cocktail shaker. Add the conserve and egg white and shake without ice. Add some ice and shake hard again. Strain into an old fashioned glass with fresh ice. Dust some ground nutmeg over the top of the drink.

This week we have gone with a winter warmer with the temperature dropping below zero out there.

A bit late for tonights episode but this will be perfect for tomorrow night.

This is a recipe we created for the guys at Slane Castle Whiskey and is soon to be launched in the US so watch out for it over there!!!!!

Hot Henry
40mls Slane Castle Whiskey
20mls Cinnamon syrup
1 small orange wedge
100mls boiling hot water

Method :- Boil the kettle!!!! pour some boiling water into a heatproof glass or mug to heat it. After about 1 minute discard the water. Add the whiskey and syrup. Top up with boiling water and stir to dissolve the syrup. Squeeze the orange wedge into the glass and serve with a napkin.

THANKSGIVING COCKTAIL RECIPE

Here is a delicious recipe for you to try on 'Turkey Day'!!!!!

Black Forest
20mls fresh cream
2 tsp drinking chocolate powder
20mls Chambord
20mls Creme de Cacao Brown
Hot milk

Place the cream and powder into the bottom of a heat proof glass/mug.
Mix until like a paste.
Top up with hot milk to halfway.
Add the chambord and Creme de cacao Brown. Stir.
Top up with more hot milk and add some faom to the top of the drink.
Garnish with chocolate flakes................

HERE IS THIS WEEKS X FACTOR PARTY COCKTAIL RECIPE:-

Vanilla Sky

40mls Vanilla Vodka
20mls fresh lemon juice
20mls sugar syrup
35mls raspberry puree
20mls Galliano Vanilla or Vanilla Liqueur

Method:- Pour the puree into the bottom of a tall glass. Top with crushed ice. Then add the vodka,lemon juice and sugar syrup to a cocktail shaker. Shake well and strain over the crushed ice. Drizzle the Galliano pver the top. Garnish with a mint sprig and berries

Vanilla Vodka is available in good off liciences like Gibney's Malahide, Celtic Whiskey Shop,Dawson St or Redmonds in Ranleagh.

To make raspberry puree just buy a tin of raspebrries in the supermarket and blend them. They will last for a couple of days in the fridge

To make sugar syrup just add equal parts sugar and water to a container and stir until the sugar dissolves.

Here is this weeks X Factor Party Cocktail.......

RASPBERRY COLLINS
40mls Gin
20mls fresh lemon juice
2 tsp caster sugar
5 muddle raspberries
Soda Water

Method:- Muddle the raspberries in the bottom of the shaker. Add the lemon and sugar. Stir, then add the gin. Fill the shaker with ice and shake well. Pour the contents of the shaker into a tall glass(12-14oz). Top up with soda. Garnish with a raspberry and a mint sprig.

Enjoy!!

This week's recipe is a tribute to our own Mary Byrne!!!!!

We have taken the classic Scarlett O Hara and revamped it. The original Scarlett O Hara was made with Southern Comfort, but we have tweaked it to be more like a cosmo as we know how girls like their cosmos and have used Irish whiskey and apricot brandy liqueur instead. Apricot Brandy is readily available in off licences......happy shaking and raise a glass or two to Mary!!!!!!!

SCARLETT O HARA
40mls Irish Whiskey
20mls Apricot Brandy
60mls cranberry juice
2 lime wedges

Method:- Put some ice into a martini glass to chill it. Pour the ingredients into a cocktail shaker with ice. Squeeze in the lime wedges. Discard the ice from the martini glass. Shake the mixture and strain into the chilled martini glass. Garnish with a piece of orange zest.....enjoy!!

This weeks recipe is dedicated to Wagner, the Brazilian lothario. We are sure he would really enjoy a Caipirinha about now.

The Caipirinha is the national drink of Brazil and all you need to make it is some limes, caster sugar and Cachaca, a Brazilian sugar cane spirit, available in higher end off licences like Celtic Whiskey Shop on Dawson St, D2 and Redmond's in Ranleagh and you will get 19 portions out of a 70cl bottle.

Recipe:-
35mls Cachaca
half a lime cut into 4 wedges
2 teaspoons of caster sugar

Method:- Place the wedges in the bottom of a cocktail shaker. Add sugar and muddle to release the juice from the fruit. Add the cachaca and some ice and shake hard. Pour the contents of the shaker into an old fashioned glass(whiskey glass)

What you need:- Vodka, raspberries, pineapple juice and Prosecco(Dunnes do a great Prosecco for about €7 a btl)Martini Glass

20mls Vodka
40mls pineapple juice
5 raspberries
Prosecco(to top up)

Glass:- Martini Glass
Garnish:- Raspberry

Method:- Muddle the raspberries in the bottom of a cocktail shaker. Add the vodka and pineapple juice and shake hard. Strain the mixture into a martini glass and top with chilled Prosecco. Garnish with a raspberry floating in it.

Congratulations to Team Ireland for finishing 4th overall in the 42Below Cocktail World Cup in Wellington, NZ.

They also won the Modern Martini section of the competiton, keeping up Ireland's consisitent record in this competition. We have always won one round of the competition since we first started entering in 2006.

40mls 42Below Vodka
20mls Orange curacao
5 red grapes
6 mint leaves
2 drops of Peach Bitters
20mls fresh lime juice
20mls MONIN Cane Syrup

Method:- Muddle the grapes in the bottom of the cocktail shaker with the mint, lime jucie and sugar syrup. Add some ice and then pour in the vodka and bitters. Shake well and pour the contents of the shaker into a tall glass with ice. Top with 7up. Garnish with a mint sprig.

ST PATRICK'S DAY COCKTAIL

Here is a little recipe that I have enjoyed on many a Paddy's Day and actually made this for Bulgarian TV as part of a show aired on Paddy's Day 2007.

I got the idea when I was in Greece teaching bartenders for Jameson in 2006. Each bar we went to gave you a plate of watermelon with your drinks.

So sitting there, eating a piece of watermelon and sipping on some Jameson on ice and I realise that they actually go well together, so when I get back to Ireland I created this little number called PULP FICTION.

PULP FICTION
5 big chunks of watermelon
15mls Monin Cane Sugar syrup
50mls Jameson

Method:- Chill a martini glass with some ice.Muddle the watermelon with the syrup in the bottom of a cocktail shaker. Add the Jameson. Add some ice and shake hard to break down the watermelon even more. Discard the ice from the martini glass and strain the liquid into the glass. Garnish with a small slice of watermelon.

So enjoy this drink for whats left of Paddy's day or at any other time.

Here is another recipe I tried recently:-

RYE N GINGER OLD FASHIONED
70mls Rye Whisky( I used Rittenhouse, from Celtic Whiskey Shop)
10mls Monin Ginger Syrup
5 drops Bokers Bitters

Method:- Add the syrup and bitters into an empty old fashioned glass. Add a little ice and 35mls of whisky. Stir for about 10 seconds, add more ice and another 35mls of whisky. Stir for another 10 seconds. ad a little more ice and garnish with an orange spiral.

(Not bad but to be honest cud have done with more syrup. The ginger notes were quite tame. I recommend 15mls Monin Ginger Syrup.)

Here is one of my favourite tipples at the moment, El Presidente #1. There are two El presidente recipes, one is manhattan-like the other martini like. I prefer this one.

50mls Bacardi 8

25mls Carpano Antica Formula

2 drops angostura bitters

Method:- Put some ice into a martini glass/coupette to chill the glass. Add ice to a large glass or mixing glass. Pour in the rum,vermouth and bitters. Stir for about 20 seconds. Discard the ice from the glass and strain the liquid into it. garnish with an orange zest.

2-3 mint leaves

Method:- Shake all ingredients with cubed ice and fine strain into a chilled coupette, garnish with a grapefruit zest sprayed around the glass and then discarded and float a mint leaf on top.

LEGACY COCKTAIL COMPETITION 2010

Congratulations to Ago Perrone, Head Mixologist at The Connaught in London who became the first entry into Bacardi's Legacy Cocktail Book alongside such greats as the Original Mojito and Classic Daiquiri.

Ago's recipe won out over three recipes chosen last Feb as part of the Founders Day Celebrations and will now go down in history as a Bacardi Legacy recipe. Ago is pictured here with David Paskins and Peter Dorelli celebrating his victory.

Ago's recipe is as follows:-

Mulata Daisy

40mls Bacardi Superior
25mls creme de cacao dark
20mls lime juice
2 barspoons caster sugar
10mls Galliano L'Authnetico
1 and 1/2 barspoons of Fennel seeds

Method:-Dust the rim with cocoa powder and carefully rinse it with Galliano L'Authentico. In a cocktail shaker muddle the fennel seeds, add the other ingredients, shake hard with cubed ice and double strain into the martini glass rimmed with cocoa powder.

I have made this cocktail at a couple of training sessions and the feedback from bartenders is very positive. I really like the drink myself too!! I think this drink will be around for a long time to come!!':- Paul Lambert, Mixo-logic Ltd.

BACARDI LEGACY COCKTAIL COMPETITION 2009

Congratulations to John O Rielly from the Apartment Bar in Belfast on winning the Bacardi Legacy Cocktail Competition 2009. John will now go on to represent Ireland at the Final in London on Feb 4th 2010.

Mixo-logic's Paul Lambert was one of the judges travelling around the country judging the 10 finalists along with Alan Kavanagh. The finalists had to make a classic daiquiri and their own creation, explaining their inspiration behind the recipe.

'Johns recipe was delicious. His whole thought process behind it was first class, taking in Don Facundo's origins in Spain to his Cuban heritage and producing a really outstanding drink which is simple for you or me to make. This for me is what makes a great cocktail. Simplicity!!!' :-

MOJITO MASTERCLASS

Mixo-logic's Paul Lambert hosted a Bacardi Original Mojito Masterclass in the Clarendon Bar last Thursday night for 30 specially invited guests. The guests were greeted with a Mojito on arrival and then spent some time listening to the story of the Bacardi family, the rum and how it is made and how it impacted cocktails especially the Mojito, the worlds biggest selling cocktail. Finally they get to make their own mojito after recieving instruction from Paul.

The guests were invited through Bacardi Ireland's, Facebook page.

Another night is happening this Thursday in the Clarendon Bar again. Join the Bacardi Ireland page on Facebook to be in with a chance of being invited to one of these very special nights.

ANNIE AND BARBIE CELEBRATE THEIR BIRTHDAY

Last Saturday Mixo-logic staff served drinks at Annie G's birthday party in the new Make Up Forever shop on Clarendon Street. Annie arrived in a pink car and the whole night was full of pink and black.

CROUCHING TIGER

This fresh zingy drink is one we make a lot in SABA. The herbal notes of the vodka are complemented by the sweetness of the kiwi and the sharpness of the lemon. I don't recommend pressed apple juice here as I think it is too sharp for this drink. Just use the pure apple juice.

35mls Zubrowka Bison grass vodka

1 kiwi

17.5mls fresh lemon juice

17.5mls sugar syrup

100mls Apple juice

Method:- Cut both the ends off the kiwi. Then peel the rest of the skin away from the flesh. Put the peeled kiwi into a boston glass and muddle. Add the Zubrowka,lemon and sugar, add some ice and shake hard. Pour the contents of the shaker into a tall glass and top with the apple juice. Garnish with an apple slice.(pic taken in SABA)

SINGLE LADY:- I have Niamh Barrett and her friends at the Speech and Language Therapy Dept in St James Hospital at their 'Team Building Cocktail Class' for coming up with this tasty drink. A deliciously light combination of gin, elderflower, raspberries and champagne.

35mls Gin
3 fresh Raspberries
35mls Pressed Pineapple Juice
10 mls elderflower cordial
10mls fresh lemon juice
champagne

Method:- Muddle the raspberries in the bottom of a shaker. add the gin,pineapple juice,elderflower cordial and lemon juice. Shake well and strain into a champagne flute. Top with champagne and garnish with a blackberry.

In June, Mixo-logic's Paul Lambert was invited by Bacardi out to their distillery in Puerto Rico to learn how the rum is made and spend time with the Maestros de Ron. Several other top mixologists from around the world were also taken out there.

'It has been a fantastic trip, being able to see first hand how much dedication and passion goes into the production of Bacardi is amazing. They are as passionate about their rum today as Don Facundo Bacardi was in 1862.

I have met some fantastic people, from the other brand ambassadors around the world to those who produce the rum, like Jose Sanchez and Jose Gomez, and being able to share thoughts with these people is a rare and fantastic opportunity. Mixo-logic's Paul Lambert gave a masterclass in using Joseph Cartron Liquers to Dublin bartenders yesterday. The class took place in the Morgan Hotel and was attended by some of Dublin's up and coming bartenders.

After a brief discussion on how the liquers are produced, Paul showed them how to use common flavours like Triple Sec and then moved on to the more unusual flavours like Parfait Amour.

They also got to taste Ruby Grapefruit liquer for the first time. This is not available in Ireland yet but judging by the response from the bartenders yestarday, it better arrive soon!!!!

FREE SPIRIT COCKTAIL COMPETITION

Mixo-logic's Paul Lambert was a taste judge at the 1st Free Spirit cocktail competition held in Morrisson's Bar, Belfast. This comp was the brain child of Hayden Lambert from the Merchant Hotel and is free from sponsorship so the bartenders can do whatever they like and use whatever they want.

The winning recipe came from Ladislav(sorry if spelling is wrong dude!) who works at the Merchant Hotel and produced a drink using, golden rum,Grand Marnier, sweet vermouth, Amer Picon, lemon juice, grenadine and topped with Moet et Chandon champagne.

Ladislav now goes to London to represent Ireland in the Grand Final at the Boutique Bar Show.

Just last Monday,28th July, Mixo-logic's Paul Lambert hosted a cockail tasting night in SABA, Clarendon Street, Dublin 2.
In association with Bombay Sapphire and Bacardi, guests were treated to cocktails on arrival, then a cocktail with each course.
During the meal, Ian McLaren from Bacardi Brown Forman UK and Hayden Lambert from the Merchant Hotel in Belfast presented the cocktails being tasted and explained why they were served with each course.

It was a roaring success and we look forward to the next night which rumour has it will be in a couple of months!!!!!

The qualifying round for the 42Below World Cup takes place on Mon 23rd June on the Morgan Hotel in Templebar. Yes, on not in. The competition will be held on the roof of the Morgan Hotel. The top three bartenders will be selected to represent Ireland at the world final in Queenstown.

Mixo-logic's Paul Lambert is teaming up with Alan Kavanagh of Total Cocktail Solutions to run the National Final of the 42Below Cocktail World Cup, which will select 3 bartenders to represent Ireland at the World Final in Queenstown later this year.

Paul was the first Irish bartender to compete at the World Cup in 2006, finishing 6th and Alan represented Ireland the following year finishing a very well earned 4th in the world.

Because of their experience in Queenstown, 42Below have asked Paul and Alan to help organise and run the National Final this year.

Mixo-logic's Paul Lambert was interveiwed om Radio 1 last Friday as part of a segment about cocktails. Paul explained how to make great cocktails using such brands as Bacardi, Grey Goose, Belvedere, Southern Comfort and Martini Rosso. Paul demonstrated how to make a Classic Vodka Martini and also a Martini Rosso and apple juice which was the offical drink of the premiere of Ocean's 13 ealrier in June. Hosting the programme in Pat Kenny's absence was Tom McGurk. Other guests included Alan Crowley of Edward Dillons & Co.

42Below Cocktail World Cup '07 Irish Team

For the first time ever there will be a full Irish team at the Cocktail World Cup in Queenstown, New Zealand in Sept '07. The team will consist of the following bartenders:-

Alan Kavanagh, Balzac's Restaurant, Dawson St, Dublin
Ryan Gavin, Harvey Nichol's 1st Floor
Edmund O' Connor, Harvey Nichols 1st Floor

The guys now have to make a cosmo while bungy jumping, Heli Shaking(which the Canadian/Irish team won last year!!!) and Shotover Jetboating while making a cocktail. All great fun!!!

Then after all that they have to work together to create the best tasting cocktail in the world. Sounds easy eh? Just another day in the office!

SABA bartender in 42Below Final

Michael Ryan from SABA is through to the the qualifying heat for the 42Below World Cup taking place at Taste of London next Friday 22nd June. 3 bartenders will be selected to represented Ireland at the World Final in September. This is the first year a full Irish team will be sent to New Zealand. Mixo-logic's Paul Lambert represented Ireland last year as part of an Irish/Canadian team. Best of luck to Michael and the other bartenders in the Final. We will announce the Irish team once we get the news.

TASTE OF DUBLIN 2008

Mixo-logic took part in the Taste of Dublin Food Fair in Iveagh Gardens Dublin from last Thurs 14th to Sunday 17th of June. The finest restaurats in Dublin and some of the best chefs were showing their skills while drink stands were available for tastings. Alan Kavanagh, Irelands No1 Flairtender, gave flair tending demonstrations in the Mickey Finns Tent. It was a great event with an estimated 27,000 people visiting over the four days. Looking forward to next years Taste of Dublin already!!!!
